小知識
過濾主要是為了除去豆乳中的豆渣,由于豆渣會使豆制品的口感變差,而且會影響到凝膠的形成,因此必須進行過濾。過濾既可在煮漿前進行也可在煮漿后進行。其中煮漿前進行稱為生漿過濾法,煮漿后進行稱為熟漿工藝法。
